And fusion rolls that incorporate innovative flavors, from sriracha and jalapeno to quinoa, but retain the elegance of traditional, simple sushi. Even though Wasabi Sushi Bar is hundreds of miles from the coast, the freshness of their fish selections rivals anything I’ve found in the Pacific Northwest—probably because Chef Phil Vilar insists on importing the freshest fish from jets arriving from Seattle.
