Savoring Pork Sandwiches Along the Pan-American Highway in Perú
Cruise south on the Pan-American Highway, ditching the traffic and smog of Lima for the bright blue Pacific and the dusty hills rising out of the desert toward the Andes. Peppered in among gas stations and truck stops, you’ll find countless open-air eateries serving up their tastiest renditions of chicharrón—a classic Peruvian sandwich consisting of golden fried pork rinds, thinly sliced deep-fried yams, and tangy red-onion relish with ají and lemon juice. Everyone has their chicharroneria of choice; if it’s on the opposite side of the highway, drivers simply pull over and hop out, clambering over the guardrails to snag their favorite sandwiches.
