Dining L'Auberge Style by the Sea in Del Mar, California

L’Auberge Del Mar’s Kitchen 1540, overseen by Chef Paul McCabe, enjoys a reputation that far exceeds the boundaries of this Northern San Diego County seaside retreat. Prepared for a mix of “the traditional and the unexpected,” we felt compelled to continually cross the boundaries of each other’s dishes, sampling fresh garden salad punctuated with slivers of Humboldt Fog goat cheese, perfectly seared giant prawns, brussel sprouts infused with bacon, pumpkin risotto, and an entrée of chicken baked three ways, orchestrated on the plate as if it was wrought by a still-life artist. And the feathery pinot grigio (recommended by the waiter) sealed the deal.
