Plucking Cold, Flowing Noodles from a Bamboo Trough in Fukui, Japan
During a sweltering Japanese summer, locals swap flu-preventing dental masks for sweat-absorbing handkerchiefs. Others forgo steaming bowls of udon for refreshing nagashi sōmen. Nagashi means, “flowing” and sōmen are noodles that, unlike soba or udon, are stretched to achieve their shape. Soumen and cold water are piped through halved bamboo stalks for heat-struck lunchers to pluck and dip into their cup of tangy tsuyu sauce. Noodles keep passing you by?
