Dining Elegantly at an Italian Standard in San Francisco
Giancarlo Paterlini and chef Suzette Gresham-Tognetti have been delivering memorable dining experiences and some of the best Italian food in town at Acquerello since 1989. There are three classics you need to consider when you visit for the first time: the famed Parmesan budino, a devilishly savory cheese custard; the lobster panzarotti, with a spicy shellfish sauce that borders on a bisque; and the ridged pasta with foie gras with a sauce is unlike anything you’ve ever tasted, rich with foie, black truffle, cream, butter, and marsala, and a vanilla-like sexiness, clinging to the pasta like the creamiest caramel. Save room for the cheese cart with immaculate Italian selections like a ciabra from Piedmont that was like goat cheesecake and the speziato al tartufo, a truffled cheese from the Veneto with a rind of cinnamon and nutmeg. The chapel-like room is elegant but contemporary, and ideal for quiet conversation.
